This white dragon (Hakuryu) is acutally a unicorn in our eyes! That's because we rarely see a ginjo (as opposed to a junmai ginjo) arrive stateside. Add to that, this is a nama (unpasteurized). Expect the crisp, fresh, fruitiness you'd expect from a ginjo and add a little dimension into the mix. This sake has notes of melon and ginger, making it a perfect pick for Niigata sake lovers as it is light, dry, and refreshing.

Our bar staff Griffin took home a bottle and paired it with a roasted lamb sandwich. It was a match!

The Shirai family started sake production in 1839. Back in mid 19th century (Shogun's era), sake was transported by sea to major markets such as Edo (Tokyo). In Japan, the White Dragon, an imaginary animal, is considered a guardian for marine transportation. Therefore, they named their sake business "Hakuryu" which means White Dragon.
