Over 100 sake sommeliers were involved in the production of this sake. With a rich umami that Sawanotsuru is known for, this nama genshu sake is also exhibits lively characteristics when chilled.

Honorary Sake Master Sake Master Mitsuyo Ota, sums it up well on the brewery's site:

It had the rich flavor characteristic of Sawanotsuru sake. When served chilled, it has a punchy, sake-like taste that pairs well with meat. When mixed with soda, it instantly transforms into a refreshing taste that I think would go well with fish and other light snacks. Of course, I also recommend it on the rocks!

Another very cool characteristic about this sake is that it undergoes ultrafiltration which removes enzymes to a minute amount, allowing for it to be a nama (unpasteurized) sake yet not have to be stored in the refrigerator. That's why you'll see it on our wooden shelves instead of the refrigerator.
