Kikuhime's fall release is a big, bold hiyaoroshi for those who like their sake with some heft. After a season of light, crisp natsuzake, we think it's just what the doctor ordered! Brewed with Yokawa AAA-rated Yamada Nishiki (the very top grade of the king of sake rice), this tokubetsu junmai rested through the summer and comes out tasting like autumn: roasted sweet potato and chestnut, ripe banana and melon, plus a fresh, creamy note reminiscent of cottage cheese and a hint of bamboo leaf. At 18% ABV, the umami, sweetness, and acidity are all full blast, yet everything stays well-balanced through a long, lingering finish.

Enjoy chilled, on the rocks, or warm with yakitori, chicken teriyaki, salt-grilled sanma (Pacific saury), or sukiyaki. The importer says it's great with pizza and french fries, and we're not going to argue.

Hiyaoroshi are sakes that have been pasteurized once in the winter, aged through the summer, and released in the fall without a second pasteurization. Hiyaoroshi are as fleeting as leaf peeping season, so get them before they are gone!
