Kijoshu is a special style of sake brewed using sake in place of some of the water, and the result is pure dessert in a glass. This is a hot commodity because it is brewed in limited quantities and has an eye-catching label. Koshinohomare uses a portion of their 90%-polished junmai (Koshi no Homare 90 PINK) as the brewing water for this muroka (not charcoal filtered) kijoshu. 

Expect melon up front with deep notes of cacao and chocolate, followed by persimmon, grape, and the rich, bittersweet body of marmalade. A subtle acidity and touch of bitterness is complemented by a honey-like sweetness, so it drinks a lot easier than you'd think, with a nice long finish. Pasteurized once and aged in the bottle.

Serve chilled, at room temperature, or warm alongside bold, saucy dishes like sweet and sour pork, karaage, tonkatsu, or beef stew. Or go straight to dessert with chocolate cake or a scoop of vanilla ice cream.
